Is the RGB version worth the extra $10?

Only if you want lighting. The memory chips, speed and timings are the same, so you pay $10 for the light bar and nothing else.

Will either kit work with my AMD or Intel board?

Both list EXPO and XMP, so they carry profiles for AM5 and for Intel DDR5 boards. Check your motherboard's QVL for the exact part number.

Which one fits under a large air cooler?

The plain FURY Beast. Its heat spreader is lower, while the RGB kit's light bar adds height that can hit cooler overhangs.

Do both run at 6000 MT/s out of the box?

Not automatically. You need to enable EXPO or XMP in BIOS; otherwise they boot at the DDR5 default speed.

Is CL36 a problem for gaming?

No. DDR5-6000 CL36 is a common sweet spot for AM5, and the difference against CL30 kits is small in most games.

Does the on-die ECC mean these are ECC modules?

No. On-die ECC is built into DDR5 itself. These are non-registered desktop modules, not server ECC memory.
