If your motor and battery can pull well over 100A, the 75200's 200A continuous rating gives headroom smaller VESC 6 units lack. For modest builds, a cheaper 60A-100A controller is enough.

What battery voltage can it take?

It accepts 14-75V, or 3S to 16S. Stay under 75V at full charge, so a 16S pack charged to 67.2V is fine but 18S is not.

Does it have Bluetooth?

No. It has USB, CAN, UART, SPI and IIC ports, so you tune over USB or add a Bluetooth module or compatible display.
