How to make Juan Valdez instant coffee
Juan Valdez's instructions: 1 level teaspoon (~1.8 g) per 4 oz of hot water at about 190°F. For an 8 oz mug, use 2 level teaspoons. Stir and adjust to taste. Iced: dissolve 2 teaspoons in 2 tablespoons of hot water first, fill the glass with ice, then add cold milk or water. It also works in baking and coffee desserts. For ratios and recipes, see our Juan Valdez instant coffee guide .
Freeze-dried vs. regular instant coffee
Freeze-dried coffee is brewed, frozen, and dried under vacuum at low temperature, so more of the aroma survives than with spray-dried instant powder. That is why the granules look like small crystals rather than dust. More on the process: how freeze-dried coffee is made .
