How big are the moulds?

Each holds 1.16 quarts, roughly one to two servings of gratin or a small dessert. The set is not a substitute for a full-size baking dish.

Can I use them on the stovetop or under the broiler?

No. Ceramic bakeware like this is for the oven and table. Direct flame and broiler heat can crack it.

How does this compare to Staub cast iron?

It is much lighter and cheaper, but it gives up cast iron's heat retention and stovetop-to-oven flexibility. Choose ceramic for serving pieces, cast iron for searing and braising.
